    Fire Management - Version Umpteen

Thank you, thank you, thank you. I came on to search for 'why after my charcoal dies down in my OKJ Highlander, and I add wood to keep temperature, I lose my TBS and get white smoke'.  (I do have wood in with the charcoal, too)  This post helped me understand why and what I could do to minimize...

    Frustrated with Mavericks probes

Time for me to smoke and 'eat crow'. I received an email today from Maverick asking for my address so they could send me a replacement probe.

    Frustrated with Mavericks probes

Have to agree with the angst of 732 probes and lack of customer service (at least for me). I ordered a 732 unit through Amazon in late March 2016 and received it April 6. On July 14 I started a smoke and the 'cook' reading was 'LLL'. I read the solution suggestion without any luck. Fortunately...

    4th of July

Have to laugh at myself. When I read the title I expected to see a beginners-like off-set smoker that a newbie like me would would have. Ha, quite the contrary. (Unless your a newbie with great ambitions). I doubt it, looks like a great outfit for pros. Hope the smoker was everything you...

    Wanting to try stick cooking

That struck close to home. I was smoking a whole butt and literally sat on the patio for about 9 hours off and on just watching the smoker and monitoring the Maverick. About 7 hours into the cook my wife asked if I had to watch the smoker all the time. I could sense a 'honey-do' coming so I...

    1st stick smoke question

Just a follow up on my original post. I was still having excessive white smoke issues so I re-read this entire thread, Hallaluia, or however it's spelled, there were some tip brought up that I tried and the 'we've elected a new Pope' smoke, I think, has been eliminated. There's still one...

    OKJoe,firebox vent closes

I did a 'search' for this but didn't get any hits. The firebox vent on my OKJoe Highland wants to close by itself.  I under stand why but an hoping to find a solution to stop it. When it starts self closing I'll tighten the screw/nut for the vent and thing are usually fine, thought I sometimes...

    What's your minimum?

I never thought of smoking and freezing! We have a vacuum sealer too, so why not, we frozen pulled pork already. Sometimes it just takes a little nudge from someone else. Gonna have to look up some of those recipes phatbac/Aaron suggested. Thanks for the feedback, time to start planning.

    What's your minimum?

I have the urge to smoke something but with just two of us I have a hard time justifying the effort involved. (An hour to get the coals ready, babysitting the smoker etc.) What is the minimum you would fire up your smoker for? 2 chicken leg quarters? 5 brats? I don't have a huge smoker, OKJoe...

    Finding Charcoal

Just left the WM in Greenwood SC, they had at least a pallet of RO charcoal.. $6.58 for an 8.8# bag. Don't know if that's cheap or not but they have it.

    1st stick smoke question

There are a lot of pecan trees around here that will 'self prune'. Folks are happy to get the limbs out of the way and I'm happy to help them.
