I never thought of smoking and freezing! We have a vacuum sealer too, so why not, we frozen pulled pork already. Sometimes it just takes a little nudge from someone else.

I have the urge to smoke something but with just two of us I have a hard time justifying the effort involved. (An hour to get the coals ready, babysitting the smoker etc.)

Just left the WM in Greenwood SC, they had at least a pallet of RO charcoal.. $6.58 for an 8.8# bag. Don't know if that's cheap or not but they have it.

By experimenting I found that using the ash door along with the vent on the FB gave me better temp control and reduced the smoke, probably from more air. (I was warming the splits)
