I am smoking a 20 pound turkey for Thanksgiving in my MES 40". I'm unsure what temperature I should smoke at? I was originally thinking 275, but the more threads and sites I check I see 225-240 is norm. What kind of timing should I expect at the lower temps vs. the higher temps? And at...
Here is the finished product on the CSRs. They look dry. Not sure where I went wrong. Thermometer read 150 but cut in and meat was cooked. Put them in at 10:30 a.m. pulled out at 4:30. At 225 most of day. Glad I backed things up with chicken legs and babybacks.
First time smoking CSRs. Have a crowd coming over for Superbowl and thought why not. Layered with Memphis dust and going with 3-2-1 at 225. Using hickory with cherry wood in an MES. Hoping for best.
