Thanks Chef JimmyJ !
I'm thinking the way I'll offer them will be cured (#1) salt/sugar cold smoked then flash frozen. It's common down here that many use saltpeter for their meats so they won't think 2 times about it being cured. P.F. Change (down here) cures their ribs and uses saltpeter. I...
Chef JimmyJ,
Thanks! :-) I just found how a guy does it in Houston http://www.msn.com/en-ca/autos/research/the-ribs-at-houstons-underbelly-are-like-eating-ham-on-a-stick/vp-BBoGFaJ
I do think I could either follow his lead and cook them about 3/4 in the smoker. But I think in this instance it...
gr0uch0 (profit)
Here's the thing.... Because of my new smoker and my wife's restaurant that serves smoked foods, others in this area are now asking about us to provide smoked goods for their restaurants.
These restaurants are in Guadalajara about 35 miles away from us. One was asking...
I have a couple questions!
1. Has anyone ever cold smoked pork ribs then freeze for later cooking?
2. has anyone ever cured pork ribs and then cold smoked for later cooking?
I'm thinking it would work for sure if there are cured (like bacon). I would see no reason why they could not be cold...
Well I got the next step done to the smoker. The old propane regulator was only putting out 1 pound per Sq. Inch and was not enough to supply the 5 burners I need to run at times. So I ordered from Amazon a Bayou Classic 5HPR-40 48-Inch LPG Hose, High Pressure Adjustable Regulator and high...
On the bottom of the drain trap is a cleanout. It unscrewed and come off leaving about a 2" opening on the bottom. That opening slipped over the top (nose) of my humidifier real nice so the tip of the humidifier points up and into the left side of the trap.
The right side of the trap has a...
I'm getting a 350 pound pig next week and will need more room in my curing chamber so I decided to move the humidifier outside of the fridge. I thought of using a hose but that was more expensive for the parts and I would have had to dive to many different places to find the fittings. But for...
Of the MES I just pulled apart two days ago here are the things I found.
The foam insulation in the back was burned to a dark brown-black. This was easy to remove.
Near the top back the foam was only crunchy brown. Still easy to remove.
The foam between the walls were still intact and yellow...
Thanks for the response Dave!
You're not late, only two weeks into a year long project having to wait a few days will not matter too much. :-)
I changed out the fan for a four inch computer fan being that the power for the other fan was DC anyway. I have that plugged into a timer for 5 on and...
Now I'm cooking with gas! Well propane..................
After doing some cold smoking for about 5 hours I noticed I didn't use much propane at all. Got me to thinking between the cost of wood and the scarcity of it here in Mexico and the low cost of propane. The tank in the photo cost me...
dirtsailor2003,
Right now the peso is hovering around 21.45 to 22.47 to the dollar. I moved here 4 1/2 years ago when the peso was 10.45 to the U.S. dollar. So now my Army retirement has almost doubled in 4 1/2 years. You may want to think about it. I know a few living on $1,000 U.S. a month...
Thanks Dave, you're welcome to come over if you retire in Mexico.
I ran the smoker yesterday with that cover and it worked pretty well then but a lot of the smoke stayed under the pan. So today I drilled the smaller holes to a little larger size. Now it smokes nice and about 10% to 20% of what...
I think it is! :-) 3 more weeks and I'll be getting a 100 Kilo hog and making 2 more of each hams, bacon and a bunch of different sausages and goodies. :-) Our goal is to make the retirees in Ajijic fat and happy!
