    Another jerk fail...

Wow! Great suggestions everyone. Thank you all so much. I’m going to play around a little more and see if I can get it right. Anyone have any favorite sides to serve with a jerk bbq meal?

    Another jerk fail...

Great suggestions, everyone. I was “smoke roasting” it on high, indirect heat on a Weber kettle. Maybe next time I’ll lay the marinade on a little lighter and forego the pimento wood and see what happens, perhaps grill a bit more over direct heat.

    Another jerk fail...

Through my meat smoking endeavors, Jamaican jerk style cooking continues to be my white whale. The few times I’ve had the opportunity to eat jerk style food, it’s been just about the tastiest bbq I’ve ever had, but I just can’t seem to come even close to replicating it at home. Replenishing charcoal in slow ‘n sear

I had definitely considered it yesterday but wanted to try and ride out the long game on the kettle just to see how it would go. Brisket was pretty good, and most fortunately I didn’t detect any off/“dirty” flavors to speak off from it’s brief exposure to dirty smoke.

Replenishing charcoal in slow ‘n sear

Thanks for the tip, I’ll definitely buy a good bag of lump charcoal for my next long smoke. We’re on the finish line with the brisket now so any acrid smoke damage that has or has not been done is water under the bridge.

Replenishing charcoal in slow ‘n sear

I haven’t found any threads dealing with my exact same problem so thought I’d start a new one. Recently got a Weber 26” kettle and a slow ‘n sear XL. I’m new to charcoal smoking/grilling but am loving the heck out of the learning curve, even in the cold MN winter. Trying my first longer smoke...

Ribs day before vs morning of?

Thanks for the good suggestions, guys! And for not getting mad that I asked a question that’s already been asked a zillion times ;) They’re on the smoker as we speak. I’ll see what kind of grillspace is available at the party tomorrow but will probably do a foil warmup either on the grill or in...

Ribs day before vs morning of?

Hi all, I’ve been lurking for years and have gleaned some great advice but if anybody is feeling patient I could sure use some validation and help with a plan. I know this subject has been covered plenty of times before but I’m wondering about some specifics. Planning on doing a few racks of...
