    1 of the 3 the smoke was so good and the brine worked well first bite was so juicy was like drinking a glass of water, think I may next time flash them on the grill to crisp the skin better but they were really good

    8 hours in and at 170 degrees for the pig pretty happy with the bark so far, sprayed with apple cider vinegar and apple juice and closed her back up will check again in 2.5 hours
