    My Aunt went through the same thing with her hip.  Like the wife was saying, they can stop the bleeding in the knee by blocking it off but the hip is different..    Prayers and Positive Thoughts for the Family..

    Just got to reading this post.   Very good information.  You can put that plate in front of me any time..   Some are saying SV first - Cold Shock and then cold smoke - sear for color   I was interested in your posting.. Looks Good.

    I picked up the same cooler and plan on using it on my larger meats and when doing big batches of sausage.  I tested out the circulation with a few coffee grounds and I was surprised how well my Anova  works.   If I preheat the cooler with hot water,  I have very little heat loss in three hours.

    I got some of the Italian Spice and the Red Wine Apple a few months ago...  My biggest mistake is I ran out and used the reg apple..   The people down the road could smell the Italian about 1/4 mile from me..   Like you said, not a lot of smoke but a smell sure will carry..
