    Brining 2 small turkeys

    I have two small turkeys one 12lb and one 13lb.  They both will fit into there own 2.5 gal bag but is tight.  Will there be enough brine in each bag to work.  Or would it be best to put into a cooler and add ice.  I want to brine for 24 hours.

    Ok I did my first bacon and it game out fair.  What are good wet cure to use.  How long do you let set, and how long do you cold smoke for?

    Thanks for the reply.  I smoked it for 10 hours 100 to 105 degrees.  The piece I got had a very hard skin cap.  I smoke it left on the pork belly is it best to cut it off before I cut bacon up.  I cook a couple of pieces and was good.  Should I have trim it before I smoked it?

    This the first time I have tried bacon.  I found a wet cure and have been in the brine for 6 days.  Not sure I will be able to get my smoker down to 100 degrees.  I know the longer I go the better it going to be.  What IT temp should I be looking for?  After I pull it off do I let it set or can...

    REC TEC Initial Observation and First Cook

    I have had my Rec Tec for 6 month.  I have gone thru over 1,000 lb of pellet.   I am so glad they are only 90 min from me so it was easy to go get another 1000 lb of pellet.  Will be doing a Boston Butt this week.  And next week will be doing 6 Butt at the same time for a Relay For Life event.

    Chicken Thighs for a large group

    I have done pull chicken using chicken thighs may time but only for a few people at a time.  I will be cooking for 100 to 120 people for Relay for Life.  Any idea on how much chicken per person I need to plan on?  Thanks for any input.
