Try this, i use mine in a very high capacity. One of the down sides of the mes is that the smoke chamber retains too much humidity so i roast my pellets in the oven for 10 to 15 minutes at 275 degrees. Next i only use abut 2 ounces at a time an ad small amounts (1 ounce) as needed. I think you...
With the mes, pellets are perhaps the best choice, try using a small amount of a specific wood "i prefer fruit wood " and use small amounts of different types every hour or so. The results can be wonderful. Always experiment, that is the joy in cooking. If 25% is successful and 75% isn't you...
I have both MES and a propane Smoke Hollow, both have there purposes and i use both alot but if i had to choose just one i would go propane. P. S. I live were electricity is only 2.5 cents a kilowatt......cheap, but i just like the heat source of a propane smoker
I don't care what anyone has said, i know there has been some negative comments on the mod but personally I love it. The idea of a self basting bird or roast while it is smoking is brilliant. Thanks for posting this, I love creativity
I've commented on this before, the MES smoker does not give you much of a bark, especially if you are trying to go low and slow.it simply doesn't allow for good air flow, the vent is inadequate and as there is no bottom vents you can't manage humidity. I use mine at nearly commercial volume...
It's all about the color of the mold, black and red are bad. Blueish to white are usually benign. Treat the mold as you would on curing ham or sausage, if blue or white simply wipe it down with vinegar this will preserve the cure in you smoker....then bring up to heat to sanitize. If black...
I have an earlier model of this smoker and I love it. Folks you have to have realistic expectations of what any piece of equipment can do. If you want to cold smoke do it in the winter.....it's a propane smoker! For a cooler smoke in the summer you need to open all vents and i put an aluminum...
Safety first! Take a multimeter and put one probe on your mes.. (while plugged in)..any major metal part, next take the other probe and touch it to a true ground... the metal part of a junction box or a water pipe. If you read any significant voltage scap the unit and get a new one, it's not...
I use apple wood pellets almost exclusively and have for years. You will actually get a better quality smoke from pellets than chips using the mes unit. One mistake many people make is to think more smoke equals better food when the truth is that the right amount equals better food. In many...
I have an Masterbuilt, i've commented on this issue before. Humidity is a issue with this model. I use my at nearly commercial volume and even with a dry drip pan unless you are smoking a very small amount of meat it will steam, it's very difficult to get a bark. One work around is to do a final...
No, no water in the pan. Moisture level (humidity) increases exponentially with the amount of meat in the box. It's a good overall smoker...just know you want get a bark on the meat.
Positives out way the negatives, easy to use, plenty of room, simple to control. The only negative for me is that it retains too much moisture in the cabinet while smoking.....almost to the point of steaming the meat. The unit needs a vent near the bottom of the cabinet. I use a different unit...
