    Slow 'N Sear ribs

    I just picked up a 'Slow N Sear' too and will be using it for the first time this weekend.  I had a home made Smokenator that I built and it worked great for years until the water pan burned a hole in it.  The SNS is heavy duty and well built.  I'm going all in and doing a brisket!  Wish me luck.

    Wool blanket from an Army surplus store works good too and they are cheap.  I just folded mine in half then cut a hole for the chimney.  Wool has a very high burn point too, if I recall it is over 400 deg.

    I'm in a small bind.  I will be getting a NanoQ from BBQ Guru for Xmas any one have it on their Smokin Pro with SFB?  My main question is the fan, should I get the 10 cfm or 25 cfm?  One website says you need the 10,  BBQ Guru says the 25.  Of course the 10 cfm is alot cheaper, so what ya think...
