    After a 12 hour plus smoke and pulled when the brisket hit 205. Put it in a cooler for another hour. Unwrapped and sliced. It was delicious; however it was late, still have a good plate with some 'tater salad, and a couple of deviled eggs. Cold beer to wash them down. What to change for...

    Great job. We thought we were buying spare rib and then the wife noticed that they were pork spare rib brisket.  But for 92 cents/pound we figured we couldn't go wrong.  Thanks for writing this up.  We'll have to see how ours turn out and will post up the results.

    Around here it's hard to find lump made in the good ol' USA.  No telling what if any controls are in Argentina, Mexico, Brazil... etc....   I saw this one at Wal-Mart and will be trying it out in the near future.  Here's a link to the Naked Whiz "The Lump Charcoal Database"...

    my DIY pid fan controller

    Just curious, what do you use the fan for?  I have thought about adding one to my smoker to help maintain temperature.
