Ok so I got a little excited and forgot to take pics while I was making it but I did take one as I put it in the smoker. Started with a simple one. Sausage with mushrooms, peppers, onions and Colby Jack cheese. Wrapped in bacon ofcourse. Put it in at 235 hoping to crisp the bacon up.
I did the 2-2-1 at 225. I used Hickory and Apple wood. When I wrapped them in foil I put some Jack Daniels in with the ribs. They were juicy and tasty. Thanks for the help
