    Looks good. One question I have. In the calculations Cure #2 is listed twice at .25%. In Len Poli's .pdf it is listed once at .25%. Do you use .5% cure #2?

    This will be interesting to watch. I am the "old-school" cheese cloth and hang in a cool place for two weeks. I also have not tried marinating in wine before hanging. I'm looking forward to seeing the results.

    I like the sausage make-up. Good job. I'll need to think about it, but I may be inclined to coarse-grind everything but the crab, roll it in afterward, and stuff it in a casing. BTW.......I gave up on posting pictures to forums from the phone years ago. They never come out looking right...
