    Modified MES 40" working hard today

    Thanks all. This is the results of the smoke yesterday. Sunday we'll be trying Jeff Shotgun shell recipe using Jimmmy Dean reagular breakfast sausage and SOMKED SALMON. Last time I did salmon somebody from Washington state said we nailed it.

    Using my old MES 40" that the controls lasted about two years. Modified with PID controller a couple of years ago, work great.

    All Watch the air flow through the MES 30". I thought I could catch drippings by using aluminum foil on the bottom rack, instead the unit now smells like burnt plastic. After a tear down the foam has cooked pretty good inside. Salvaged some parts and went to lowes and got the 40". I have...
