    Your Favorite Pellets?

Could not agree more with all the above, especially the hickory/cherry mix.

SAINT LOUIS RIBS 2 WAYS. OLD SCHOOL AND NEW- GLAZED AND HEATED DAY AFTER

Looking good and making me hungry. St Louis style at our house over BB's as well. Just better eating IMO. All this rib talk has me second guessing my planed evening meal of grilled fish & shrimp. Oh well too late now to change up the menu.

New to smoking. Drum stick recommendations?

I coat them with a light coat of olive oil and fairly liberally coat with a dry rub. Place in smoker at 350* for about an hour (make sure IT hits 165) then lightly coat with bourbon sauce and give them another 5-10 minutes for the sauce to get sticky. Pretty much exactly the way I do wings, just...

Pit Boss Austin XL... Anything better for $500 or less?

Exactly! Both my wife and I get pretty severe indigestion from heavy smoke, love the flavor just can't deal with the results. The pellet smoker is about perfect for us, especially with LJ pellets.

    New Pit Boss

One thing I would change on my 820 is the hopper design. I'd like it bigger (mine's only 18#) and steeper into the auger. I've never run out of pellets during a smoke but have had to rake them down several times. Sorry you lost your butt because of it.

    New Pit Boss

I bought a PB820fb in March and this could be my exact story. I can't explain it but compared to my other smokers (UDS & homemade electric) food just cooks faster for some reason. The results are awesome the ease of using has made the other 2 smokers almost untouched. It took me a bit to learn...

    First time using casings

Been using one of these for 35-40 years now. We used to make 300+ pounds of deer sausage every year and this thing was a time saver and works great. Probably not worth the cost for a 5-10# batch every now and then but if you wanna make a bunch at one time you won't regret having it. Yes you...

First attempt at Chicken Thighs ("Smoked" on Gas Grill)

Nice write up and the finished product looks good to me. I just threw some thighs on my pellet grill, kind of a first try for me too. I do wings all the time and I'm running basically the same steps, just assuming I'll have to lengthen the time for the thighs.

    Help on a pellet smoker

A voice of reason! I agree that there is no one size fits all for all of us. There is no doubt that a pellet smoker will give a milder (read less) smoke flavor. For my wife and I, who a heavy smoke gives us each heartburn, a pellet smoker is perfect. I love the flavor of a good stick or charcoal...

    pit boss pellet grill 1000

I tried mine from about as low as I could set it to wide open and really didn't notice much if any difference. I finally set it fairly open and left it. With the blower forcing air through the smoker I don't think the cap matters. IMO it's just for looks.

Pork Char Sui (Chinese BBQ pork

I've been wanting to try this since I read the OP. Finally got around to doing it today, turned out great. Thank you @ofelles for the recipe and introduction to this dish. I never think to get pics until after the fact but here is a shot of the leftovers that will make some work lunches this week.

    pit boss pellet grill 1000

Don't know what kind or how much smoke you are getting now but my pit boss gives more smoke flavor than my homemade electric w/pellet tube or maze. It is not a strong smoke though and lots of folks use a pellet tube to supplement the smoke. Personally I like a light smoke vs more pronounced and...

    pit boss pellet grill 1000

I don't have that exact model but they are all pretty similar. Overall they are a solid grill/smoker with a 5 year warranty should you need it. Somewhat of a learning curve on temp control but once figured out they are easy enough to control. It won't have many bells and whistles but it doesn't...

When you send the husband to do your errands...

Good looking brisket, sounds like you have nailed it. I've done 3 briskets and haven't done one yet that really satisfied me. They've all been good but not what I'm trying to accomplish.
