    Why complicate it with temp gauges? Follow the lighting instructions and don't worry about temp. That's the beauty of the PBC. Easy, thoughtless, cooking. I cooked everything in the one I had and not one time did I check the temp of the cooker. Everything turned out amazing.

    Bacon color during cure

    I know this thread is old, but it is relevant to me. My bbb looks like this on day 8. Curing for 14. What if it looks like this on day 14? Shouldn't it all be red? I used the digging dog farm calculator for my cure.

    Newbie just can't get it right

    I was never totally satisfied with my cooks until I started smoking everything at 275 -285. Haven't been let down yet with that temp. I used to smoke around 225.

    Lurked on here for years and just now joined. I am in Lexington, KY, but originally from West Portsmouth, OH. Came to Lexington for work after I got out of the Air Force after 10 years of service. Now am a government civilian. Love BBQ, guns, hunting, and pretty much anything outdoors.
