Turned out great. First run was just to see if I can hold the temp. Held it right at 250 for a half hour. Bumped it up to 275 for a while....then dropped it to 225. Seemed to stay rather even. Plus or minus 5 degrees. Salmon the next day cook tasted fantastic. Next weekend we get serious ! Haha
