    I plan to smoke a brisket overnight. I hope for it to be done by 8:00-9:00 in the morning. We won't eat until 7:00 or so that night. What should I do with the brisket while I am floating in the pool drinking beer all day?

    My Camp Chef pellet smoker's controller has bee acting up lately. It stops, starts, doesn't feed then shuts down, .... Rather than just replacing it, I was thinking of upgrading. Any suggestions on a PID controller? I'm not ready to upgrade the whole smoker yet. Dave
