    I have 2 flats that total 9.5 lbs My questions are... Can I smoke these at like 200-220 and be okay leaving these in the smoker overnight? I think I'll start it at like 7pm...we are eating at 430pm the following day. I figured they would be done by noon and I could foil in a cooler with towels...

    I got 2 flat beef briskets totalling 9.5 lbs. I'm thinking about starting them at 6pm tonight and then taking them out about 10am tomorrow morning. I'm wondering if this is too long? I was planning to wrap them in foil and let them sit in the cooler with towels for 3 or 4 hours once they reach...

    I want the nice bark so I'm not going to foil until I take it out of the smoker and then I'm going to foil and wrap in towels and put in cooler....what should the internal temp be when I take it out of the smoker? Can I let it sit in the cooler for 4 or 5 hours if need be?

    Going to attempt an all night Brisket around 7-10lbs - looking for a few pointers. My plan is to get the temp to 200 degrees and throw it in at 6pm...I'll tend it for the first 6hrs then let it go until I get up in the morning.     Im smoking 2 - 6lb boston butts this weekend...I'm wondering what flavor of woodchips would be best to use? I've never smoked a pork butt before.     I'm going to attempt to smoke a pork butt or two this weekend. Just looking for pointers to be sure I dont screw it up...this will be my first pork butt.
