    It is indeed a 250 gallon propane tank. It was 94 inches long over all. 30 inches round. I found it on Craigslist fir 150$ it was used as a air tank for a sandblasting Co fir 10 years after they got it used.

    Last year I built a new 250 gallon reverse flow. Have done 12 events with it do far. ribs from this week 115 lb whole hog last week. couple of fatty Pot luck dinner at work.

    Been there before, I had two stuffed burgers and two chicken halves staying "warm" in the grill last summer. They got forgoten untill 9pm when I went out to check the propane valve...... Oh well was all I could say at that point because it had been past the 4 hour mark of sitting in the danger...

    Since you said the meat was too salty, maybe give it a try again but soak it in water for an hour or so and change the water and soak again .....test fry like bacon maybe? Just a thought.

    Pork butts done early...Advice on keeping warm

    I would hold them wrapped up in the oven at 150-160 for 4 to 5 if you can.....maybe roll the heat back up to 185 for the last hour?...then into the cooler for the rest of the time.
