carefull on those heating pelletts just because they are "100% hardwood " they might have been made with lower psi which means they need binders (glues,etc )

just my 2 cents but if you want to smoke the day before you could have pulled chicken sandwichs . just pull the chicken after a little cool down time, put it in some ziplocks with a little juice and reheat the next day.reheat on the grill with your sauce and stir often
welcome to the forum their is tons of info and lots of knowable people .
if you let us know what smoker you are using it would help a lot.
when you get a minute stop by roll call and tell us a little bit about your self and add your location so people know what part of the country your from ...
can you cook a couple buts and packers the day before and reheat for the lunch crowd ?
they will see and smell the meat you put on in the morning and wont know the difference

stopped by a local grocery chain store and asked about briskets, he went and got a flat (that's all they carry ) $ 6.50 a pound I almost fell over.
Is that the normal price ? ,give or take
it wasn't that big of piece of meat for $50 and you loose a 1/4 in cooking

You might have better luck with a char- griller. Still on the lower end of the off sets but if you look through the threads it seems to be the favorite with the right mods. Unless you move up to higher end grill you will need mods to make your life easier.

I put mine on the left side (opening in the front ) next to the RTD (it does raise the temp on the thermo but i use my ET732 for correct temp)
what flavor of pellet are you using ? the fruit pellets (cherry,apple,peach,etc ) need to be mixed with hard wood pellets (maple,oak,hickory,etc) to...
not sure lots of butchers have their own lingo ,it sounds like st Louis style not trimmed (skirt still on )
but for .79 a pound who cares ,buy alot and play around
