Thoughts and prayers for our Texas brothers

Thanks BBQ Willie.  We've been rain free for the last three hours but as I am writing this the rain has started again.  If there is a silver lining, the forecasters have said the rain for the next couple of day may not be as severe.  Hope your friends in Pasadena are ok. Been here for 50 years...

Thoughts and prayers for our Texas brothers

Thanks guys.  I live just 30 minutes east of Houston and we've had about 20" of rain since yesterday morning.  The system is expected to drift back toward coast and then over Houston. Water is everywhere with more rain expected in the next couple of days.   Joel 1 Corinthians 9:24

    Happy 4th of July Brisket

I wrapped the brisket around 1:00 pm with the IT at 172.  Took it off the smoker at 202 at 3:30 pm.  Wasn't quite sure how it was going to turn out but it did come out pretty good. Joel 1 Corinthians 9:24

    Happy 4th of July Brisket

My local Walmart had briskets on for $1.96.lb so I grabbed an 11.7lber.  Lit my Old Country Pecos this morning and rubbed the brisket with salt and pepper only. Put it on at 6:15am. 4 hours in. Enjoy the holiday and stay safe. Joel 1 Corinthians 9:24

    Father's Day Pork Shoulder

Pork shoulder came out as one of the best I've done.  Juicy and fall apart tender.  Kept temps between 250-300.  At 5 hrs sprayed with apple cider vinegar and wrapped in foil.  Cooked it another 5 hrs at around 250.  Took it off at 6 and let it rest for 35-40 minutes. Happy Father's Day to...

Put on a 9.9 lb pork shoulder on the Old Country Pecos this morning at 8.  Rubbed it with salt, pepper, onion powder, garlic powder, and paprika. Forgot to take pics but will when finished.  Going to be a hot day today with heat index reaching 105. Going to eat some this weekend but taking most...
