Alright guys, here we are 13 hours later. Butts are at about 205 so I pulled them off getting ready to chop up! I've sampled a little of course and is so tender! Falls right apart. And now that the butts are off putting the ribs on!
Well it's been about 8 hours into my smoke, had to refill the charcoal. I'm not sure if that's good or bad with the minion method on an 18.5" WSM. However them butts smell great and it held right around 225-250 the whole time. They have an IT of about 160+-5.
Just put a couple 8 lb butts on the WSM! Used a pretty basic dry rub and the minion method for the first time for the charcoal. Gonna put some ribs and sausage on in the morning before I pull the butts off. So I suppose I'll grab myself a beer, put it in my American flag coozie and have myself a...
Thanks! Gonna do something simple this weekend like chicken or some steaks. Big project coming next weekend for opening college football weekend, gonna do two butts and a few racks of ribs. Can't wait! Will post pictures and updates as I go.
After reading reviews and looking at several smoker to upgrade to I purchased a WSM this afternoon. Very excited about it and can not wait to use it this weekend!
Ok been 3 hours and brisket is sitting at about 145*F and the ribs are about 170*F. Looks like I put the ribs on a little early but will wrap them in foil soon with sauce and keep warm. Everything looks and smells to be going great!
Thanks for all the advice and encouragement! Got the brisket and ribs both on now after smoker got to about 230*F. It's about 4lb of brisket and a whole slab of ribs. Will keep temp between 225-250 and spray with apple juice when I add coals.

Sorry no pictures. It went very well. Temperature stayed right at 225 adding charcoal every half hour to forty five minutes. Will post some pictures of my smoker after work today to see what everyone thinks of my ECB.
