I will be smoking at 225. I was just concerned about it reaching safe temp without cure

If using pork and beef mix and smoking at low heat should cure be added

I will be making and stuffing and smoking my own for the first time.

I have one half inch stainless rod. Would this work OK for hanging sausage in the smoker? Also how would be the best was to hang klobase on these rods, by the casings or would twine be best? Thanks
