Hello...So I just read your basic brine recipe thread.  3.84 oz DQ pink salt to 1 gallon of water ( 24lbs to 100 gallons of water thus 24lbs X 16oz=384oz at a ratio of 1/100 is 3.84oz cure to one gallon brine).  Then I see this picture for FMI spice cure with a 2% nitrite and it says 20lbs per 50 gallons of water or 20lbs X 16oz=320oz at 1/50 ratio is 6.4oz per gallon. Why is the amount of cure so much more per gallon with the FMI spice cure?  Is it because of the amount of nitrite in the mix?  just curious. thanx
