OK heres a thought! Right now in Las Vegas it's dry! 36% humidity, where i grew up by the rose bowl its 54%. Maybe that make's a difference as why a water pan would make a difference, being close to the ocean would make a water pan even less needed. During the summer in Las Vegas its a sweat box, probably wouldnt even need a water pan at all. Chime in .
Well, the weather here in Corning is pretty dry and hot in the summer as well. Still haven't found a need for a water pan in the UDS. Sometimes use one in the SnP if the humidity is really low.
Ive cooked spareribs on my UDS and use the 321 method,come out really tender.beer can chicken, brisket.No water needed here in arkansas where the humidity is 99% all yr around,lol
