I really like me some short ribs. I don't know what you have there but I can get long bone shot ribs and I smoke them to temp for they are really thick. I take them to about 200° and they are fall off the bone tender and very good to.
Just did 8 racks of the beef short ribs from matherns $1.99 lb. smoked em using 3-2-1 . fantastic other than i now know why they were on sale .
1/4" thick slab of gristle running thru the middle of every rack. . ended up carving the meat off the bones to take out the gristle and will use it in a future dish.
LOL been so long since I did short ribs I had to look at my notes. (can't find decent ones here) My notes say cover with cheap mustard and rub, set in fridge over night. smoke 3-2-1
