Hey guys I got a bunch of beef short ribs on sale I need some good ideas on what to do with them!

They are great, especially if you can get some meaty ones. The ones around here don't have much meat on them.
I really like me some short ribs. I don't know what you have there but I can get long bone shot ribs and I smoke them to temp for they are really thick. I take them to about 200° and they are fall off the bone tender and very good to.
Yeah everything in this swamp comes with a lot of meat on it
How long they usually take to get to 200? Around 6 hours?
A lot of guys do them 3-2-1 just like spares.
I did some using 3-2-1 and they were fantastic.
3-2-1 = 3 open 2 covered and 1 open correct?
Do I need to get the membrane off the ribs like pork?
Mustard and rub or just vegetable oil and rub

Just did 8 racks of the beef short ribs from matherns $1.99 lb. smoked em using 3-2-1 . fantastic other than i now know why they were on sale .
1/4" thick slab of gristle running thru the middle of every rack. . ended up carving the meat off the bones to take out the gristle and will use it in a future dish.
How long do you guys usually let your rub sit on the ribs before you start to smoke

Usually overnight. 12 -24 hours or so.
Ok sweet...and the membrane needs to come off just like pork ribs huh
If you can get it off without a fight. It's not critical.
LOL been so long since I did short ribs I had to look at my notes. (can't find decent ones here) My notes say cover with cheap mustard and rub, set in fridge over night. smoke 3-2-1
