My rib addiction kicked in again yesterday so I rubbed down some baby backs with Bilbo's Rub and fridged em over night.
Here they are coming out the fridge getting ready for the smoker.....
Drinking some Drambuie Coffee this morning I was pondering what to have as a side. As usual SMF didn't disappoint as I found some posts on Potato Bombs...also some of the comments on how to get more filling inside....as I dont own any type of coring device...i rustled through my bag of magic tricks and came up with a solution....
worked great...probably would be better with Russetts....Cored an onion also (bad idea..cried like a baby for about 2o mins)
Cooked and mashed the cores (minus the ends)...blended with Bacon, Smoked Pepper Jack, chopped onion core, italian herbs and some heavy cream. Then stuffed the little buggers...
Wrapped em in bacon
And into the MES with the RIbs..over Pecan/Apple in the AMPTS....I put the Potato Bombs in at the same time as the foil stage of my 2-2-1 Rib plan....
3 hours later...here's the taters

And Ribs
And the final plated Q-View....Baby Back RIbs, Potato Bomb, Onion Bomb(?) and Wicked Beans
The Ribs were perfect...as were the beans...the potato bombs had potential...just needed longer in the smoker..Next time I'll put em in with the Ribs...another 2hrs at 250F and they'd be perfect. The onion.....probably wont do again...I like baked onions but this was a little over powering. Maybe a yellow onion?
Either way...it was a great Smoking Sunday!
