Did my first smoked meatloaf today and figured I would try mashed potatoes too...
I'll apologize now for the lack of in-process pics but some yard work got me sidetracked. End result couldn't have been better though!
Fresh picked potatoes right out of the garden this morning, quartered them up and boiled until fork tender, smoked 'em for 25-30 min then mashed and seasoned. The meatloaf was full of all fresh picked green pepper, onion, garlic and tomato. Added 2 eggs, a handful of breadcrumbs, a handful of brown sugar and a squirt of ketchup. I guess the reason my girlfriend and I like smoking/grilling/cooking is we never keep track of what we use or how much, and chances are we never have the same ingredients twice lol. I enjoy reading all of the posts on here so I thought I'd share....
