I wish my wife was more of a meat eater.  She shies away from big cuts like that.  She wants me to make gyros on the blackstone.  I smoked the gyro loaf, so at least I get to play a little.

Well we moved Mothers day dinner up to Saturday so here it is. Turned out very tender juicy and great tasting.  Got several good ideas from Forum members on the cooking technique so thanks to all.
