Did a batch of ribs for a long time friend who has recoverd from a yrs worth of cancer therapies. He wanted ribs, so thats what he got.
Put 16 racks of BB's in the 60, and we watched and waited until the folks came around for the promised grub fest.
One hr into the smoke, apple and oak. 225-245 degrees.
and then again after foil, no glaze this time, about 4 1/2 hrs in.
and yes they were very well recieved by the guests.
Just before cutting them into 2-3 bone sectiona after the glaze.
Good time had by all, and we also feasted on pulled pork and pulled chuckrolls that I smoked 2 days prior.
