Life, got in the way of my leftover throwdown entree.

I had planned on this for a few weeks, but missed the deadline.

This is a pork loin, that was cut and pounded with a meat hammer, and rubbed down with pesto.
Inside is leftover Thanksgiving dressing, spinach, cranberry, onion, garlic, and Granny Smith apple, prosciutto and smoked mozzarella cheese, rolled and tied.

The sides were fresh picked asparagus and yams with butter, brown sugar and allspice and my favorite, Trader Joe's orange cranberry relish on the side.

The pork roll was smoked with Rosemary, then put in the oven to finish up. It was a fantastic meal.
And the Little Book Bourbon maple gravy, topped it off big time.

It was super good, my wife is a light eater and she ate two slices.
The leftover, leftovers are gonna make KILLER sandwiches. And the sweet potatoes could be put into a pie crust and be killer sweet potato pie with a little more brown sugar, maybe tomorrow.:emoji_sunglasses:

Dang! Man I hate you missed the deadline...That would have caught quite a few votes. And I'm in line for leftovers leftovers leftovers!

Boy that sure does look good Dan, and I bet there are a few folks who entered are glad you missed the deadline.
