Hey everyone. I've been lurking here for a little over a year and finally decided to create an account and begin to socialize. I say I'm from Georgia but moved to Texas a few years ago. Figured it was time to assimilate to Texas BBQ and stop holding on to my Southeast beliefs that barbeque was pork and nothing else. I bought an MES30 in late 2016, used it to some success over the last year and thought I would move on to a pellet grill/smoker after the holidays. Then, I had a change of heart and wanted to hone my skills a little more before I made a final decision on a major investment.

That being said, thanks for having me and I hope to engage in conversation and maybe contribute sometime in the future!
 
Welcome to the board! Never hurts to learn some more methods and traditions. We have many TX people here so they can help you out with tips and sources.
