Great Job nepas..! Do you run your meat through twice to get that nice even texture... The batch I just did turned out great but doesn't look that smooth on the cut end.... Thinking it might be pockets from the cheese or I didn't grind it fine enough... Your thoughts? Thanks! K
I've only done sausage twice now so I have been using my hands to mix... I'm sure it could have been mixed more thoroughly... Next time I'll use my KA and the dough hook like you suggest... Thanks for your input! Happy Smoking, Smokin - KK
I only do one grind when i have to. Sometimes the cheese can cause pockets and you can get some cavitation there. When i make hot dogs i do a fine grind.
What are you using to mix the meat up with?
When doing small batches i mix by hand. 4-5 lbs the KA with the dough hook over 5 lbs i use my meat mixer or bucket mixer.
