Had the craving for some beef ribs, so I headed to my local real butcher shop to get some that actually have meat on them. Got these short ribs for $8.99/lb.
Rubbed them with SPOG and a little paprika, and threw them in my offset smoker with some Hickory chunks. Tried to keep it at 250 but i was fighting my smoker for the first 2 hours . My temps were not holding steady. Finally got that under control. 10 hours and a lot of frustration later they were finally done, or rather i was cuz i couldn't wait any longer for my IT to reach 200. Even told my wife to never let me smoke beef ribs again but after biting into it i changed my mind.
