Had the craving for some beef ribs, so I headed to my local real butcher shop to get some that actually have meat on them. Got these short ribs for $8.99/lb.
Rubbed them with SPOG and a little paprika, and threw them in my offset smoker with some Hickory chunks. Tried to keep it at 250 but i was fighting my smoker for the first 2 hours . My temps were not holding steady. Finally got that under control. 10 hours and a lot of frustration later they were finally done, or rather i was cuz i couldn't wait any longer for my IT to reach 200. Even told my wife to never let me smoke beef ribs again but after biting into it i changed my mind. :emoji_sunglasses:

Nice piece of work, those ribs look great! Beans and mac salad on the side sure look inviting also, it's giving me some inspiration for later in the day. For me, getting my offset settled down and under control is a big part of the fun of using one. There are so many variables to take into consideration, outside temp, wind, type of wood and moisture content in it, working the vents, no two cooks are ever the same. Gonna fire it up in a little while! LIKE! RAY
 
Good looking ribs. Nice smoke ring and really moist. I could down a few of those, that's for sure!!

Thanx for the kind words guys. Yea i love my offset, I think what was giving me trouble was the brand of brikets I used, they were on special at home depot but they were burning out way too fast so i think i'll stick to using those for grilling only.
