brisket

    Hello to all, I am planning to do a brisket this weekend. I just got done reading Jeff's method for a all night brisket smoke. Not sure I'm up for an all nighter. What do you recomend for a first briset smoke.

    a really early morning wakeup,lots of beer,fuel,a fatty or 3, & patience.[​IMG]

    Phinfan,
    If your not up for an all nighter then you can always cheat. Start your smoke about 6pm. Smoke it until about midnight, pull it off the smoker, wrap in foil and put it in the oven. Stick your thermo in it and pull it out when it reaches 200. Usually around 530-600am. Yes its cheating, but I admit, I do it myself every now and then. Shhhhhhhhhh, dont tell nobody I told ya that.     I was wondering why you are asking about brisket in the 'Pork' forum?
    Anyhow ... lots of info available here on doing brisket .... good luck!

    Actually that very thought occurred to me but, because everyone was so patient with me on my first couple of smokes, in the pork forum, I was directing my question to them. Yes, I'm sure ya'll bounce around regularly, to all forums, but not knowing for sure I thought I would start like that.

    ya can run.. but ya can't cook a chunk a hide-w/out us smelling smoke.....
