BBQ Summer Sausage???

    I was just curious if anyone else has ever made barbecue flavored summer sausage? I searched the web, and found no mention of this recipe. I just had to try it, I used Jerky seasoning barbecue flavor, added a few other things and treated it the same as any other summer sausage. I must say, this came out great , I made 20lb for the first batch, and it's almost gone, and that was just a week ago. I would like to know if anyone else has tried this, thanks. BEAR

    Bear, Welcome to Smoking Meat Forums and thanks for sharing your thoughts on summer sausage. I love a good summer sausage, a couple of thick slices with a thick slice of red onion on a whole wheat roll with some sweet & spicy brown mustard is my kind of sandwich.

    One thing that I have done is made my summer sausage with chunks of cheese mixed right into the meat. You have to be careful to keep the temp below 160F in order to make sure that the cheese does not melt and end up in the bottom of your smoker.
