Going thru the meat dep't a few days ago, they had this pork.... It was dark, like beef..... I had to grab 3 cry-vac pkgs.....
$1.49 ain't bad either....
Don't that look good... Our store has not had pork, that good looking, in forever.... It must have been a mistake....
Destined for some other store me thinks......
So,.... other than freeze it, the process began with 9#'s chunked and put in the cure/sugar for a week or so...
I think bacon will be on the menu... Full sized chunks will not slice well on my small slicer...
Then there is our favorite, "go to the freezer for sandwiches"... pulled pork.... 21#'s.......
Bride cooks at 225F for 18 hours.... I cannot argue with her on how to cook pulled pork..... That would be stupid.....

Then there was the Country breakfast sausage... 17#'s....
And the Andouille for Brides killer Jambalaya...... 12#'s.....
....... the new tube worked perfect...
.... It wasn't the right tube for this job, but I had to try it before making collagen beef sticks and bkfst sausage.....
Out of the overnight refer and ready to vac.... they are ugly looking...... they taste good....
Andouille patty with the trimmings.... Eggs got too hard.... Oh well.... S++t happens.....
That was a busy day.... Using fresh pork in place of frozen.... a good thing..... Having the freezer filling up with
home made eats..... priceless.....
