With all this smoking I've been doing lately I figured I'd just BBQ today. I brought the water pan up higher in the UDS and filled with some charcoal and added some mesquite chunks after the coals settled. Nothing special here, I just dusted the ribs with Lawry's seasoning salt and brushed them with italian dressing, same with the red taters. I just wish I built a UDS a long time ago. Enjoy.
