Hi, i'm Morissa from Richardson Texas USA.  It's a suburb of Dallas.  I have used an electric smoker for a few years.  I just bought a MES 30 to replace another smoker that got ruined by my male dogs. I built a Cinder block fort to protect my new smoker AND bought a cover for it.  lesson learned.  

I have been using this site for information gathering and just thought i would join.  Thanks for being here and for all the great information.

BTW - former Mansfield, TX resident here.  I still miss the days, 20 years ago, where you bought a brisket from Winn Dixie or Piggly Wiggly and left it with the guys outside of the store with their killer mesquite fired stick smoker.  They would look at the weight and tell us what time to come back for mesquite smoked, cut it with a spoon brisket and burnt ends.  They only used salt and pepper for seasoning too...still the best brisket I ever had.
