So I'm smoking 2 8 pound pork shoulders, and 3 racks of ribs. I'm using a masterbuild smoker, so I had to cut each rack in half. I will be cooking the ribs on the 2 bottom shelf in my smoker. Since they are at the bottom and cut in half will they be over cooked if I smoke them for 6 hours?

well depends on the cook time  and temp if you're cooking at 225 or lower  maybe not but if you're cooking at 275 or higher  6 hours those ribs will be way overcooked

Is there a reason that you can't pull them off earlier if they get done?

Six hours for spares at 225 should be about right.

Maybe a little long for BB's.

Are you looking for FOTB ribs or do you want a clean bite?
