Practicing for rib competition next weekend. Ribs came out well. Temps spiked a little when I foiled because I left the lid off while foiling. Got up to 380 degrees...ooops. Closed vents and eventually got down to 275 again. Good red color on everything.

Sauced two ribs with BBQ sauce. Other two ribs were sauced with juices from foil. Stole a lot of good ideas from Travisty ribs he prepares and smoking hoggz rub variation and their BBQ sauce.

Cooked 2 hours without foil and then foiled for a little over an hour. Finished quicker than I wanted, but I watched them close because of temp spike. Let them rest a full hour in foil. Again, longer than wanted. It all worked out.

Good smoke ring. Sprayed with pineapple and apple juice after bark formed.
