My buddy gave me an old bullet style electric smoker.  Love it and smoking meats and deviled eggs so far.  But my stupid question is could I use an electric smoker for just simply low and slow without smoking wood in it?  I love smoked meats and all but sometimes I just want a nice juicy steak that is not smoked.  I know I could go to my charcoal grill and do it that way but I think it would be much easier on the smoker.  Thoughts?
 
Actually if its an old well seasoned unit, even just baking things in it, they will have a smoky flavor. It will probably surprize you. 

You might also remember that depending upon your smoker, you may have a hard time searing that steak.

My Mes 30 smells good when it's off . I cook a lot with no chips or pellets .
 
Old style bullet electric is probably a Brinkmann.  Basically has one heat setting, and that is "on".   It can cook without smoke chips, but just watch the food as like I said, it has one temp setting and you have no control over that.  Should work though.  It's basically going to be like cooking a steak in the oven (or roasting a steak to be more exact).  No sear, but it will cook just the same.  Try it with some inexpensive cuts before going all in with the premium cuts.
