Hi everyone,

I'm looking for some flavor injection recipes to use, specifically for pork shoulder/butt. I've seen a lot floating around the internet, but if you have personally used a specific injection recipe that you love, please pass it along!

Personally I just use commercial products. For pork, I really like Butcher BBQ Pork Injection, and Big Poppa Smokers Pork Prod. As far as homemade, I have only done it 3-4 times and that's all it took to decide commercial was the way to go. For me it didn't really add any significant flavor, did not make the meat any more tender, and just made it so I had to worry about 40-140 in 4 rule for something that didn't make much of a difference. Basically had just used pork stock from the store with some ground up turbinado (to a powder) some apple juice, apple cider vinegar and salt. Ive also tried just a mixture of apple juice and apple cider vinegar, and the two alone.

Stores here don't sell pork stock. If I want it I have to make it myself.

What you can inject depends on the size of the needle. If you're just injecting liquid maybe with dissolved salt or sugar, you're fine with anything. But if you want herbs like sage you'll need to steep and strain them like loose-leaf tea. Otherwise you clog the needle and your plans go off the rails.
 
Only the higher end stores here will have it in the cartons, but if I want a good pork stock, the 2 butcher shops near me sell it in a little tub along with pork fat and beef fat.
If your grocer doesn't have it, that's one way to get it. Another would be Asian grocery stores.
There is also a product called "Better Than Bullion" and they sell a pork base paste that you mix with water. May even be able to find it online.
Anyway, just some ideas on where to get pork stock. Though it's also pretty easy to make from scratch.
