Cooking 12 pork shoulders at once

I am going to be smoking 2 porks shoulders at one time. one is 6.95 lbs. one is 7.95 lbs. I had planned on 225 degrees for 12 hours trying to achieve 200-205  temp to pull. . Does this all sound correct . . I am using a Masterbuilt Electric Smoker, and Should I cook them on separate racks or on just one .

It sounds like a good plan.

It's been several years since I have used a MES for hot smoking.

But if I remember the top racks are hotter than the lower ones.

If that's the case then I would put the larger butt on a rack above the smaller one.

Maybe one of the MES guys will chime in with a better idea.

I'm an MES guy, but a fairly new one so I can't speak to temp differences, though I do plan to experiment\measure and find out soon. I'm doing 6 pork butts on Thursday, assuming I can fit them all in, and had planned to rotate the racks every so often in case there is a heat differential.
