Corned beef question.

A local supermarket is running a special on corned beef for St. Patrick's Day. They are selling it for 50% off, it is $4.79 a pound. Which at that price I am more willing to try making pastrami for the first time.

Can I freeze the corned beef for later use since its been brined? Or do I have to soak overnight, smoke and then freeze?

I forgot to add, it's Nathan's brand corned beef flat. Is it worth 4.79$ a lb.?

You can freeze as is if you are going to use it in the next month or two. For longer term freezing, drain, rinse and rewrap it first. The salt in the brine can cause rancidity and affect the texture...JJ

$4.79 is 50% off? CB flats in my area are $5.99lb regular price. Local supermarket has points on sale for $1.88. Just finished making pastrami out of two of em. So good.

Yeah that's the sale price. The price of beef has been outrageous around here. I don't smoke as much beef as I would like because of it.

Hell even 80/20 ground has been $3.99 lb. for awhile....it was at $1.99 forever before the price of gas skyrocketed. Even though gas prices have gone down the price of beef has stayed up.

Seems high for corned beef, especially this time of year.

Corned Flats locally in central NJ is in the $4-5 range but the Points here too are $1.88ish...JJ

I just picked up 4 Flats $1.88 with coupon and I am going to be able to get a few more during the week.

CB in northern Indiana was $1.69 right after St. Pattys day.
