Made a meatloaf using Discos Char Siu recipe

Started with 1 1/2 pounds of 90/10 ground beef, 2 slices off Ciabatta bread crust removed and cut into small cubes.1 egg, 2/3 cup milk, salt ,pepper,Thyme and 5 Tbspn Char Sui Formed into a loaf using a bowl.Rested in fridge for a few hrs.
Smoked using Pecan for about 3 1/2 hrs. in my MES 40 I miss my mini already
Sliced and I gave my neighbor half
The pink color is from the food coloring in the Char Sui
Fried some onions and made some mashed potatoes
For desert I made an Apple Cobbler using Honey Crisp Apples
