How Do I Keep the temperature steady using A Small off set dual Smoker?

And so Im the New Jack...
I have this New small Smoker and My biggest dilema is keeping the smokeing chamber at 200.225...
Im all over the place using mesquite chips logs chunks..but after 9 hours smoking a brisket it was ready for slicing..no it didnt shred but it taste good but honestly from 1_10.. it was a 5
Help help help

Welcome aboard. Take a minute to calm yourself down and give us a little more info. What type of smoker? What exactly don't you like about your brisket? We're the temps too high, too low or up and down?

Folks here see glad to help but need all the details.

Awesome. .Yes..I Just bought Char-Broil® Oklahoma Joe Longhorn Charcoal/Gas Smoker and Grill

As I am new to Smoking Brisket my dilemma was cooking slow..
I started with mesquite wood logs to start the fire and immidiately I was at 350..Obviously too much wood to start once it mellowed I was at either 270 or 180..I couldnt stablize the fire with the logs so I started with chunks every 40.to 50 minutes and still the flare ups were too much..I realize that the smoker is small so I added less chunks and then found myself at 170.180..
I was either too high or too low.
.Now the brisket itself was only 6.75 pounds Seasoned for 2 days
And layed to smoke at 9am..@ 130pm I took it out and wraped it in heavy duty foil twice. Since I knew I wouldnt get it to shred since my fire was inconsistent.And left it to an internal temperature of 202. and took it out at 630..and let it sit for an hour and half to cool..
I got a nice char..no smoke ring and thank goodness no ashtray taste ..
And so I am trying agin this upcoming weekend but will be using hickory chunks no logs and instead of mesquite.

Warrs , I highly recommend you take a day or two , get some various fuels (including Brickettes ). , play with it and learn it's "Persoality" .

Don't 'use expensive meat ,get Chicken and cook that until Chinken is a cuss word to you ROTF.gif . You will soon have that Girl doi g what you want !

Once you are confident enough , we can start you on the good stuff.

It will be a week or so , and yuo'll be good to go. . .
